Question:
Is there any way to recover e-mails deleted from Exchange through Outlook 2000?

Answer:
Yes, if you have Deleted Item Recovery enabled. If you do, you should see a “Recover Deleted Items” button on your Outlook toolbar when you’re looking at the Deleted Items folder.

If you don’t have it, or a like item on the Tools menu, then you probably don’t have Deleted Item Recovery configured on the server.

To configure it, go to the Exchange Admin and the Private Information Store container on your Exchange Server. Click the Properties button and on the General tab you’ll see some options for how many days you want to retain deleted items and if you want to wait for a backup of the store to clean the recovery database, and so forth.

Once it’s configured, any future deleted items will be retained for the duration you specify and you or your users will be able to recover them as you like.

For your existing items, however, I’m afraid you’ll probably have to resort to restoring from backup.
